Limit order quantity based off customfield value?

Hello.

Assume I have a product "White Shirt" with a Stock Quantity of 30. Let's also say I have a customfield_value (store_availability) that has the value "15".

Can I somehow limit the amount you can order to only 15, even though there is 30 in stock?

I have a few stores and each one is shown their own store availability based on their user group.

So one store might have "5", the other "10". However, the logged in user group can only order the amount they have in the custom field (store_availability) for their store.

Is this possible or a bit too far fetched?
