Do not display price

How can I display some of my products as a price range and more info in category view rather than a specific price with add to cart.  Some of my products require more information before it is possible to quite a price

You could set the price of those products to 0.00. This will automatically replace the price with a button 'Call for price'. Then you can override the language string "Call for price" for example with "Request a quote" - if that fits your case better.
