I would attach PDF documents can only be downloaded by registered users How can I do that in Virtuemart?

Depends on what you mean "only by registered users", but with this plugin, you can grant, that only registered users are able to download it. they just buy the product for free and then they get a link.

What I want is that all visitors can see the products of the store, and for those who are registered appears the option to download the data sheet. Is that possible?

You can add code so that the download button or link is only revealed if the shopper is registered and lgged in. Or add a module for each product page that only displays when logged in.
