Ecommerce and ordering

Hi,

I haven't tried Virtuemart yet.
Do goods have to be paid on line with Virtuemart or can the custommer submit an order, and be confirmed by email. The reason for this is I want to be able to have the custommer pay for the purchase on delivery of goods in person.
