"Shipment" and "Payment method" fields editable on order BE?

Hello developers,

Is it possible to make that "Shipment" and "Payment method" fields to be editable on order BE?
In case products are changed in the order, there are also changes in weight, shipping cost, etc., and payment amount.
So far I did that in the database, using phpmyadmin, but it's a complicated and time-consuming process.

It would be great to edit those fields on the order page.
