Require Custom Fields

I want the store to refuse to allow the customer to "Add to cart" if the custom field has not been changed.

I thought this would be an option in virtuemart, but I haven't been able to find it. If anyone has a way of doing this, it would be appreciated.

what sort of customs are these?

parent no stock in multi varients then requires a choice

I am using Joomla 3.5.1 - PHP 5.6.23 - VirtueMart 3.0.16

The custom field is a string, set as a cart attribute, and cart input. Set to the addtocart layout position and is not a list.

So your saying if I set up a parent of "Select a size" Set its stock to "none" and then set all my sizes as child variants it will require it to select a child variant as the parent is out of stock?

the idea of no parent stock only works with multi variants and parent/child items

I personally don't know if it is the intention that standard cart  attributes should/can be made compulsory

Check the Custom Fields For All plugin.
It has that feature with some others that will make your life easier.

Also you can combine it along with the Stockable Custom Fields for parent/child products generation
