Default Product Details Page

I don't understand what is the different between (Default and Override) options for most of system pages.

For example for  Default Product Details Page there are 3 options (default, override and notify). What is the different between them?

Please do not shout!. That is likely to piss off other members so nobody will respond.

The options on the product details configuration tab are to select which template overrides to use, if any. eg Notify shows a simple template with an email notification text and button for a product that is out of stock or maybe for special order.
