Shipping Method based on Category

Dear forum;

I need to be able to set fixed shipping methodes for certain categories, some of my products will be shipped, while others can only be picked up in my fysical store, is this possible ? (i know there are plugins for dynamic shipping costs, but it's not the costs that change but the entire shipping method.)
