custom fields options not showing when adding product

Hey Everyone! 

I've added a whole bunch of products on this site with custom fields with absolutely no issues....now all of a sudden, I cannot add custom fields any longer.  I see the first drop down menu under Custom Field Type, but when I choose the custom field I want to add, it doesn't display the variant with it's own options below link normal.  Please see attached.   Any help would be greatly appreciated!

What 3rd party extensions do you have?

One Page checkout (I think this MAY be the culprit - I had an issue with it that they fixed and that is when I started having issues adding products, but they say they didn't touch any VM files, only their own plugin files)

VM Email Manager

VM Bulk Editor

I also noticed that I don't have the ability now to delete images from a product once they're uploaded and I cannont use the drag & drop feature either.

Probably you need update your 3rd parties.
