Here is the website. www.c2motorsports.com

I was working in virtuemart adding products, and i went to check and every product and product category was organized alphabetically but I did NOTHING affiliated with ordering. I tried changing the order on "product categories" but nothing is changing. Is there an override or anything that may have done this that I can fix? I am clueless.

See VM configuration-->configuration-->tab article sorting.
On top of that page, you'll find different choices for sorting articles and categories.

This helped a lot thank you very much. I am seeing where I can choose ascending and descending but it isn't allowing my to do "custom" ordering. I am going to dig into it and see if I can figure it out. Is there any advice or anything to lead me into the right direction?

You probably just have to play a little with all the possibilities for sorting.  ;)
On that page in config, but also in VM-categories. Good luck!

Wanted to update this thread as I have found out the solution and hope this can help anyone who has the same question. Thanks to Lockerbie for pointing me in the right direction.

As mentioned by Lockerbie:
-Log into Joomla
-Go to Components and click on Virtuemart
-Once you are in VirtueMart Control Panel, look to your left and select Configuration under the "Shop" Category.
-Select the Cofiguration option under Configuration Category
-Select "Product Order Settings" and you will see a bunch of checkbox options.
-You will see " Default category sort order" with 2 dropdown boxes next to it.
-I selected "Ordering" for the first one, and "Ascending" on the second one.

Under Product Categories, you will have to custom order your products and categories and save the order. This worked for me and everything is back to normal.
