Selling products question

Hi Guys. My website www.thestonesuperstore.com has many categories and products in them. I do not want to sell products from some categories. Is there a way by which i could stop users from purchasing few products. I know there is a way around this - reducing the stock level of the products to "zero". But i would really like to have something like "Call for action" Form to get the users details.

Use template overrides for those products or categories. Remove the add to cart area & replace with your call to action text linked to a form.  That's what I would do.
