How to edit fields in email?

Hi all,

When customers place an order or when administrator update status order, an email is send to customer.
How to edit fields in email?

eg : I want to edit "first_name" in BT address to "First Name : first_name", in other words, i want to add text in the front of each value in BT address.

Where i have to edit?
