Editing Page notices and titles in VM

Hi..

I am wanting to change the text on some pages, like the Choose Shipping/payment pages, as well as what some buttons say. I have looked though the language files but I see no reference to these text strings.

I am hoping to do a language override for these edits but first need to find the "String" that references these occurrences.

Any thoughts?
