What defines the category in Breadcrumbs?

So in the store How can i get the breadcrumbs to always display the right path?

If a product is in more than one Category why doesnt the breadcrumbs show the Joomla menu path so the user can click "back" and go back to the category they were in before?

The "Force canonical category" appears to be a workaround to make the product show in the Joomla category so i will just need to change about 1000 products!
If there was a way to do this through Joomla that would be useful!
