What happened to all the payment and shipping options in Virtuemart 2.0 ?
They are blank? No preset options?

How can I setup Paypal Payments Pro?

USPS and UPS?

As noted in the release news item, of just 28 days ago:
"The next months we will mainly concentrate on module and plugin development and supporting 3rd party developers. We will also update the wiki with a manual, and do workshops."

Some plugins are already available, eg USPS and maybe Paypal Payments Pro. Like the initial release of VM1.1, it was a while before the third party developers started releasing the payment/shipping modules.
