Shipping - override prices

The shipping plugin doesn't fit me, because I would need product or category based shipping calculation, so I am wondering where can I write some code to override the shipping cost and just use my own calculation (just set if one of products use category X shipping price is X, if he uses category Y, shipping price is Y...)?

I was thinking on modifying plugin to take product weight and use that as shipping cost and than just sum together all product weight numbers and use that as shipping cost - maybe any idea how to modify shipping plugin to enable that?
