I think that children shouldn't be displayed in category. I look for the decision. What i believe JediG is trying to explain is that when using Stockable Variants, and selecting a child product, the main product image does not update. Nor does it show the correct colour in the cart.

I had the same problem on a site once in VM2.0.6 and thought adding images to the Child products would solve the problem.

I have seen this done in VM using an AJAX update to refresh the page with the new colour variant - but i'm sure they didn't use the Stockable Variants plugin. This meant it wasn't possible to manage the stock of the child products (from what I understand!).

As you can imagine, when using Stockable Variants it can be very confusing for the shopper if they select 'Green' and the default image in the cart is 'Black' from the master product.

I've not used stockable variants since so not sure if this is still an issue but we resolved it by simply removing the images from the cart (shame as they looked great too).
