Vendor mail replyto & adding tracking numbers to orders

Hi guys, i have 2 question

1. How could I change replyto in email to vendor? I want to make that I can just click respond in my mailbox and write to customer not to myself -.-

2. I made Tracking packages for my shop. I have frontpage which display package status/place/time etc. in customer orders.
The problem is: I must write tracking numbers in phpMyAdmin and its really irritating. I made something like that:

And I want to just write the Tracking number and click save as usual (when changing status)
But I dont know how to do that ( I mean saving)
