Default shop vendor country

Hi, 
I have been searching for a solution to this but all I can find is in relation to the default country for users checking out.

Currently my country is somehow set to United Kingdom, its a fresh install of Virtuemart 2.

When I try to create a new product category it comes up as English (United Kingdom)
When I look under Shop > Shop it again says English (United Kingdom)

How do I change this? does it make any difference? I disabled all countries other than Canada and the United States.

Do you mean the Union flag showing? That signifies you are using the English Language. When you want to enter in French you should see the French flag.
