How to modify Virtuemart admin menu

Hi, do you know what is the files I have to modify to remove some links from the Virtuemart menu in the backend (such as Utilities, Configurations or others)?
I want to do this because I have an user that must to be able to insert/modify product/category and nothing other things.
In alternative, do you know how to limit permissions for an user? I've tried to set storeadmin permission but the admin menu is always the same. Thanks
