Which type of plugin do you use to do this ? (System - itcs Matomo 1.1.2... Others...)

actions needed to use Matomo with VM is very easy using basic setup. For J/VM there exists a plugin which does this job.

To use Matomo's features with VM you should invest own work at VM template and play with it. It requires careful setup of products and / or categories at VM at least depending on your needs. In any case it needs proper maintenance to achieve whatever you want to get above most basic counting of visitors / impressions per page visited and path of visitor through homepage.
