Title: paypal payments pro safe?

how safe is paypal payments pro and/or authorize.net, etc. to use with virtuemart, is the credit card info from paypal payments pro stored on the website servers or paypal.com?

any advice when setting up and choosing everything?

PayPal Pro itself is secure. The level of security in VM depends on how you set it up and what module you use for PayPal Pro. You have to look at the card handling options offered by the VM/PayPal Pro integration you plan on using.

PayPal Standard is secure when you use the PayPal object and form, since card data is not stored on your server and it uses https.

Sorry, no comment on authorize.net - have not used it yet.
