Don't need to know how but only if I can at this stage.

Can I,

Without hard code changes...

remove the add to cart buttons,

have a limited number of products per page say, 20 with a navigation at the bottom that says next 20..

Specify in Australian dollars the price. (only US and euro and others in DEMO)

No. That's not possible without digging into the code.
