Hi I was wondering if there is any extension / mod that will allow my users to pay a deposit and let the customer pay weekly over a set period of time

For a start it will be country dependent ..  some gateways offer in some countries credit payments

UK only, any you know of that do? and why is it down to the gateway?

It is the PAYMENT gateway that offers the credit / payment option. Check with the payment gateways that You think You would like to use.
