How can I create a datasheet for a product?
I will need to create more fields, to create this datasheet, is there any component that created this datasheet?
And also I can do searches for this fields in the datasheet.

Joomla and VM versions etc ?
This would be done by adding custom fields to your products. These product fields are then displayed under product details. You do not need any extra component for this.

In admin Virtuemart >product > Custom Field :
Add each customfield you need.
If you are not a Virtuemart Pro, use type : String add a tittle and Save.Do not change anything more( you can do some avanced test after).
After you have saved all your fields, you can edit your products and in the last Tab customfields, you can add each field
