Hi Experts,
I'm using VirtueMart 3.0.12, PHP 5.6.16 and Joomla 3.4.8.

Today I tried to change the order layout using the settings: Configuration/Orders->Orders on one page = "False". After that I'm not able to change default the shipment methods as well as payment methods (I press the change payment method / shipment method button and nothing happens). If default payment / shipping methods are not set, I cannot process to next order step - "Order" button doesn't work.

There is no such configuration in default VirtueMart. Are you using some commercialm extension or template?

This is the gefault VM. Perhaps I translated this tab not correct - I'm using the Polish version. There is a screen in attachment on which I've marked this option with my translation.
