I posted an earlier question about mail setup which on reflection I thought might be more confusing than not !
However I would like to be able to test whether my website is sending the expected emails at the right points in the order process.
Is there any documentation (I can't find any) that describes what emails are sent from who and to who, in Joomla 1.5/VM 1.1.5 and Joomla 3.4.8/Virtuemart 3.0.12 ?

There is no documentation left AFAIK for the historic 1.1.5 version, and current VM versions use a very different system. You define when emails are sent in current versions: http://docs.virtuemart.net/manual/general-concepts/219-email-handling.html
You earlier mentioned problems with using Gmail. AFAIK there have been about 1 thread about Gmail with VM2 and none at all since VM3 was introduced.
