Title: Change the "In stock" ammount variable displayed at front end

Hello all,
Joomla 2.5.18 & Viruemart 2.0.26 here.

I would like to replace the in stock amount of pieces with a regular expression like Available, please see attached screenshot.

Or perhaps it is possible to set the default amount for new products to 1 instead of 0 in admin end?

Your versions are seriously out of date, but maybe you want to invite hackers in?  http://forum.virtuemart.net/index.php?topic=118683.0

Showing the stock amount is not a default VirtueMart function, so must be built into your template overrides. You could edit these or ask the template supplier to help you.
