I'm trying to get VM3 working as a online ordering system for a take away restaurant.
I need to disable the shipping methods

Same as with VM2 and discussed here many times before. Autoselect a shipping method requiring no paymenmty and name it something like "Takeaway" - or hide it at checkout using template overrides. Hide ship to address div on the checkout using template overrides.
