Site is not live yet but when it goes live I don't want customers to be able to buy online (yet) so should I just delete the code for the ADD to Cart button or just change the colours so it disappears as eventually I will want customers to buy online. either way what is the best way to do either.

Simple way is to enable "Use only as catalogue" in Configuration/Shop
