When I have 1 item product in stock, I cannot buy, it 's like stock = 0
No child or parent product, it's simple management. we put also 0 product ordered or not shipped in tab product status

I am assuming this isn't just a statement and is an actual question? :)
Have you checked stock saving?
IE: If you have pending orders which have this product in them, I'm pretty sure the: Virtuemart system, won't allow it to be bought if you then have stock check enabled - basically the user could be in the process of paying for this item; while another user then adds the last one to their basket - which technically will be about to be bought by another user. As a result, I'm pretty sure it will reserves it in the system; until the first user completes or cancels the order.
I would suggest checking / removing pending orders and see if this resolves it.
