I am using Virtuemart 2.0.26d in Joomla 2.5.18.

I want to be able to manually add an item to an order or change the amount of ordered items. However I can find the edito button. Must be a simple solution, hpe someone can help me out.

Didn't find a real answer on the forum or in the documentation, so I am assuming that changing the order via the backend is not possible.

So when a customer places an order, calls me and request me to change the number of items from 2 tot 20 I am not able to do this easily via the backend?

You can edit orders in current VM versions on the orderinfo page, look for the icons under the # Quantity column. See pics (this is taken from 2.5.1 but the same is found in 2.0.24d)
