If you are using template overrides then all you have to do to return to VM's default view is to rename the com_virtuemart subdirectory in [your-joomla-template]/html/ (note this is for the VM display, not for the whole Joomla template).
You should also check you have the right template configured in VM config/templates/Shopfront Settings

where should I do this? in the server? or in joomla administration panel?
The first is best done using FTP. The second is in VirtueMart configuration in the site backend.
