One question for you is how the site search works. Example, if you search for Masks, only a few masks show up but if you search for mask all of the masks show up. Concern is that people can search for either or they can call things different. For another example some people call patient bibs by the word bib and some call them napkins. How can we get it to give the same response no matter which way they search?

This is a semantic search and is the correct way to search
At the moment Virtuemart is not using semantic search but aboslute matching.
You could check 3rd parties in 3rd party forum, extensions.virtuemart.net and JED.
Check not only searching stuff but also content tags extensions.
By the way even google itself hasn't got 100% semantic search
This is their most hard challenge for years.
So i think that it is hard to find a search extension working this way, unless if you are using tags or other methods to add keywords to your products
I also need to be able to have the customer search the product #s without the dashes that are in my products. Is there any place to put tags in the products
