I am using Joomla 2.5 and VM Installed version 2.0.22a

I have set myself up as a Super User/Admin and the Site Config etc to have our emails sent to info@theuniformguys. com .au

I just received 2 orders which has used my other email address and the ONLY place I can find this is on my Server back end as our contact.

I have JUST selected under VM Admin Configuration:
Emails Settings
Order-mail format
HTML mail
Use the vendor email address : YES

Do you think this was the issue as ALL other emails have been coming through to the correct vendor email info @ as above, however just 2 random orders came through to this system email?

Thanks - just wondering if I have missed anything else. :)

Use the vendor email address refers to the from address for order emails. Without that set, the from address would be the shopper. This is a workaround for some antispam measures on shared hosts.

Order emails are sent to the vendor address entered on the Shop/Shopper information tab.
