Could somebody please have a look at the screenshot and hopefully help me work out why the text on the three buttons is not showing

Probably the text colour is the same as background. Check with Firebug. http://forum.virtuemart.net/index.php?topic=102850.0

Or your template overrides are not set up right to display the billto-shipto button text.

Thanks a million, I've never used Chrome Developer before, but it's very similar to firebug and I was able to determine that I needed to edit the CSS on each theme that my template uses.
