i am about to launch my shop today and i have a question regarding stock managing and seo:
i set the "Action when a Product is Out of Stock" to "Displays 'Notify Me' instead of 'Add To Cart' button".
but what will happen if a product is no longer produced and i will never sell it again?
if I'll delete it - the link to the product will be "broken"
if I'll leave it as is - in a year or so I'll have a lot of products with "out of stock" (i am selling small qty of each product)
so? to delete it? to leave it for good? other suggestions?

It depends if there is another prooduct that is still active that the customer may wish to pruchase in place of the non stocked item
I would do a 301 re-direct from the old URL to the new product URL if the items are very similar and then unpublish the item you will no longer stock
