i have been asked to build a site for a convenience store but in there products they want a far more simplified look so once u click the category you can just click add product to basket rather than clicking the individual item then looking at the description
something similar to the photo
also the client wants the customer to be able to look back at there previous orders and have like a quick pick option to that they can quickly order items they have purchased in the past is that something virtuemart can do please advise

You need a custom category template. Search the forum to see how to create a category template override.
VM currently does not support creating orders from previous orders. This will need to be a brand new extension.
