I want to add a bulk discount to one of my categories or even add a discount promocode, is this possible and how do I go about this??

In the current versions (now 2.0.18a) you can add bulk pricing per product, setting a quantity range for each price level.
You can use the inbuilt coupons for offers, using the Minimum Total Order setting, or for more flexibility try Awocoupons to make special disount coupons - http://extensions.joomla.org/extensions/extension-specific/virtuemart-extensions/virtuemart-coupons/11629
