Is it possible to change the names on the different payment things like changing the "Check Out" to say for example "Buy Now" and so on?
Can be more specifc if needed, would really appreciate some help.

You could edit the xx_XX-com_vrituemart.ini file inside your language folder but as kkmediaproduction already suggest you is better to use template overrides so when updating languages file or update vm you will not loose your changes.
