I just made my categories at the front page, but now I want to make sub-categories.
If you look at my website http://www.vandskishop.dk you see that the categories now is:
"Beginner Skies", "Slalom Skies", "Jump Skies" , etc....
I now want to make the main category "Waterskis" and put the "Beginner Skies", "Slalom Skies", "Jump Skies" like sub-categories.
When I do that, I go to Virtuemart - Product Categories - and change the "Category Ordering" for the 3 categories from "Top Level Category" to "Waterskis".
The funny thing is that when I click on the "Waterskis-category" - it is empty.
If I make a menu "Products" - "Waterskis" (Virtuemart category layout, selected category "Waterskis", it is working from the menu, but not from the icon on the frontpage.

I have made a "Demo I" category, as a main category, with a "Demo II" category as sub-category to show you.

Your are using a commercial template as i see, do you use the quick installation package i suppose gavick provides or you make a clean joomla, vm installation?
What's your Joomla and VM version?
I used the quick installation, live updated to the newest VM version 2.0.10
Joomla! 2.5.6
VM 2.0.10
I have the question at Gavick's Forum as well and the answer i have so fare is:

Probably you forgot to mention on gavick forum that you have updated vm, because there are template (theme) changes which you can find here: http://virtuemart.net/index.php?option=com_content&id=416
But your issue i don't think is related to that, please try to make a clean installation of joomla and vm and then apply gavick template as describe to their template instructions (i believe there will be some instructions).
Usually quickstart's have a lot of issues so always is better to make a clean install of joomla 2.5.7, install VM 2.0.10. VM AIO extensions and them apply gavick template.
You will be able to test also VM without overrides.
Update:
btw, regarding your issue apply all your categories under a joomla menu like you did with demo. Also please try with SEF urls disabled because as i see some of them are not configured properly.
Last get that last update for your template (normally should be updated to version 2.0.10 from your vendor)
