I'm new to VirtueMart. When developers create templates centered around VirtueMart on Joomla is it necessary for them to edit/customize what appear to be VirtueMart core files that can be overwritten during a VirtueMart upgrade? I had a great-looking template installed and when I upgraded to 2.0.8e the template broke. Modules for displaying products broke, etc.. I'm trying to find out what to expect when using third-party Joomla templates with VirtueMart.

If you need to use third party templates then the template developer should provide updates to the VirtueMart template overrides. They will not be core files that the template developer modifies, but layout files only. As members have requested more features the VM output has been changed, so new overrides are required.
Changes in versions are documented and available in the VM backend - click on the update button in the left menu - "You have the latest version

Looks like the developer created the template for version 2.0.6. Is there a way to tell if VM was updated with a critical security fix versus a new feature? Since the third-party template works with 2.0.6, I'm not sure if I should just stick with this version or if 2.0.6 contains some security-related or other critical issue.

Members will be told if it a security fix is applied. But if you stop now at 2.0.6 then you will miss out on the bug fixes and extra features being actively introduced. And most likely will not be able to update to Joomla 3 and subsequent versions.
