Hello.

I am setting up a website for an organisation that will rely on donations:

I need a shopping cart that will allow people to state how much they want to donate.

So instead of them buying a product for a set amount, they can fill in, in a space, how much should be removed from their credit card to go to the organisation.

I will redevelop the site in Joomla and Virtuemart if you know of some way to do this. But at the moment, Virtuemart seems to be about a product with a set price.

I wouldn't use a shopping cart for that. I set up something similar for a charity site using Community Builder with the CBSubs plugin - has worked very well as it suggests donation amounts as well as allowing people to enter their own figure. I expect there are other solutions for this, though.

I agree, a shopping cart is for products with a specific price. You might get by with a website done in any content management system like Joomla or Drupal, then add a PayPal "Donate" button, but that is out of the sphere of this forum.
