Hi there is a way that you could try .
Set your shipping methods to "Maximum number of products" = 1
It is in shipping configuration.
make sure that on the front page that you explain this and in the shipping description you also state that products can only be purchased one at a time.

Hi i tried that setting I mentioned. Once they added one product, the cart would not take two products ? Did you find otherwise?

* you could have an option in a field that asks registered users their preferred payment option (drop down box) . Then you will receive notificatiuon of this customers details - you then add that customer to a group and that group is tied to a certain payment option?
BUt, BUT ,- people like to chneg their minds about how they pay - Not sure if fixing a payment option is good for sales.?
