There are many templates that have a variety of shopping cart set ups just try a few.
There is the one page cart setups
There are also extensions free and for a fee that have a variety of set ups.

Many have worked hard on these maybe look there before stepping to the next stage.

hello John,

sorry for asking that but: is it really a problem with the template ? I switched to joomla3 basic template (Beez5) and have the same problem.

In which VM/Joomla versions are you trying to change the cart view?

The cart display  is templated by the layout files in jpomlaroot/components/com_virtuemart/views/cart/tmpl/  and styled by VM's css. Often it is sufficient to override some css to change the display as you want - see http://forum.virtuemart.net/index.php?topic=116620.0

If you need to chnge the template files then the edited files should be used as template overrides. See http://docs.virtuemart.net/tutorials/33-templating-layouts.html and http://www.ostraining.com/blog/joomla/overrides
