Automatic override functionality for every custom field

Is it possible to just let every custom field that is configured be disabled? Now I have to add the override = 1 manually to every database record of the customfield_product database.

The problem is that when you don't want a certain customfield anymore due to stock issues for example, you cannot remove the customfield, else already made orders also get the customfield value removed. The solution is to override the customfield in the database, so you have the disable checkbox available. Is it possible to just let every product automatic be overridden, or better yet, just show the disable checkbox for every custom field.
