Product Availability by Rules/Conditions

Hello everybody

I'm wondering if there is a way to make different products act with different ways, when they go out of stock. For example, I want some products to be orderable even though they are out of stock and some others to be "Not Available" for order (in that case I need "Add to Cart" button to be disabled).
