A clearer clue to your issues may be that VM 3 has introduced the concept of 'Sublayouts'.

It seems (and I am not yet an expert at VM 3) that a lot of the parameters that used to be in the 'view' files have now been moved to the sublayouts.

Look in 'public_html/components/com_virtuemart/sublayouts' you may find the answers you seek there.
