Exporting customer order using phpMyAdmin

I've used the following tables to export my orders to duplicate of my site on another server. All is well except however payment method and shipment info are no where to be seen on my new server. What tables do I need to get these two fields migrated over too?

they are in the individual tables e.g.

aml9y_virtuemart_shipment_plg_weight_countries
aml9y_virtuemart_shipment_plg_auspost

etc linked by virtuemart_order_id & order_number (dae605 etc)

payment the same e.g.
aml9y_virtuemart_payment_plg_standard
aml9y_virtuemart_payment_plg_paypal
