stock level errors / product_ordered

Hello, we are having problems with discrepancies between the "product_in_stock" showing in the system and actual stock levels at the warehouse. I suspect it must have something to do with stock handling when making changes to orders and changing the order status to shipped and back to refunded and confirmed. But not been able to put my finger on it so far. (Has anyone had similar experiences?)

I also noticed that the "product_ordered" numbers are often incorrect, or seem to be "old". Could someone shed some light onto how this figure is used in the system? Does it have a direct impact on stock levels or could I simply clear all to 0 - or would that mess up stock levels later? When does the system clear the figure, is it linked to order status "shipped"?
